Savory Breakfast, Anytime
For each person you will need:
1 tsp. olive oil, extra virgin or organic
1 tsp. organic coconut oil
¼ onion, chopped
1 clove garlic, chopped
½ or whole fresh tomato, washed & chopped
1-3 leaves of kale depending on the size or the leaf, chopped
1 organic egg
Fresh Basil or Rosemary to taste

Eggs & Kale are amazing!
Heat oils in small pan on medium heat. Add onion & garlic, stir, cook until just soft, add tomatoes & kale, stir, cook until soft, add basil or rosemary. Make sure the bottom of the pan is covered with the mixture, make a small well, add the egg, cover, poach until the white is fully cooked.
The egg should sit on the veggies & won’t stick to the pan. Serve the egg & veggies alone or with whole grain toast or biscuits.
You can use spinach instead of or in addition to the kale. For more servings use a larger pan & add more veggies & eggs.
Jalapeno, mushrooms, cabbage, green onions, grated carrots: use your imagination & add whatever veggies will cook down & provide a nice base for the egg. You can also substitute cubed tofu in place of the egg. You could use salsa & fresh spinach if you are in a hurry.
This meal only takes a few minutes to prepare; it can give you energy to start your day alert & vibrant. It also makes a nice quick & filling meal anytime of the day.
